

Indian/Dirty South Fusion
After spending the entire morning outside (Whole Life Challenge benchmark workout) and the entire afternoon outside (tedious yard work and dog-ball-throwing), I decided to spend the rest of the day outside as well. I took a quick drive out to Falls Lake and started tossing in some doughbait.
I caught a couple catfish for dinner, and this is what I came up with on my drive home: how should one best cook catfish? The answer, of course, is to fry it. But due to the aforementioned Whole Life Challenge, cornmeal or a traditional batter were out of the question.
So I started getting creative. I have a sack of besan sitting around, which is a flour made from chickpeas, used in Indian cuisine. It’s kind of cloying at times, and I had delicious fresh catfish, so I actually made a kind of tempura batter with it by whisking in bubbly water. Going with the asian influence, I sliced up some thai chilis, and made a dipping sauce from lemon juice, mustard oil, and green onion from my infinite green onion cup (just ask…)
Finally, to bring it back to Durham, I had some leftover collard greens which I battered and fried with the catfish.
Not bad for the first night of the Challenge!
Yes! I have persimmons in my yard, and they’re just ripening now. I’m apparently competing with the critters in the neighborhood, because I see a lot of seeds on the ground… Now, let’s just hope I don’t get any bezoars!
I made a delicious boiled dinner: corned beef, carrots, some of Daedre’s kohlrabi, onions, cabbage, potatoes, and lots of wholegrain mustard.
I had a proper English fry-up this morning: fried egg on fried bread, snausage, bacon, blood pudding, tomato, mushroom, and all smothered with A1. And a bloody mary.
